Italian Sausage: – 2 lbs. pork shoulder, 1 tsp. oregano, 1 tsp. sugar, 1 tsp. salt, 4 tsp. butter, 1/4 tsp. marinade
Sausage: – 1/2 lb. portabella mushrooms, sliced1/2 lb. sharbat tomatoes, peeled, coarsely chopped1/2 tsp. oregano, 1/2 tsp. sugar, 1/2 tsp. salt, 1/4 tsp. pepper, 1 lb. fresh egg yolk
Cook the pork, marinade and set aside. In a large skillet heat olive oil on medium high heat, add garlic and sauté for about 2 minutes. Add the onions, and cook for about 5 minutes. Then add the meat, skin side down, and brown lightly. Be sure to turn the side down and brown lightly on both sides.
Carefully break each egg into a small bowl and then mix together with a fork to ensure all the air is removed. Add the remaining ingredients and stir to combine. Once everything is combined and the moisture is squeezed out you will have a great dish, better than anything you could buy for your evening meal.
Serve the egg stew over rice and vegetables such as carrots, red and green pepper, and celery. You can also garnish with parsley and lemon or lime juice. Enjoy!
